Compressed Yeast - A Natural Source of Vitamin D

Compressed bakers yeast is a living, single-celled organism derived from a pure culture of Saccharomyces cerevisiae grown on molasses and other nutrients. The yeast will provide a consistent and balanced fermentation resulting in excellent gas production, retention and optimum dough conditioning in a variety of applications.

The color varies depending on the molasses the yeast is grown in and the growing (fermentation) environment necessary to provide a product with the desired consistent performance and microbiological characteristics.

Fresh bakers yeast packaged in blocks (compressed) naturally contains 1135 IU vitamin D/ 100 g of bakers yeast based on solids of 30%.

Innovation

The block (compressed) yeast uses a cello wrap. Lallemand was the first in the market to use a cello wrap for its compressed yeast. The unique cello wrap provides an exceptional barrier from air and protection from molds.
