When founded in the early 20th century,
Lallemand focused on the production of yeast for the North-American
baking industry. Using its knowledge base and technological assets in
microbiology and fermentation, it has come to serve the needs of other
industries throughout the production of bacteria and derivatives. It is
today one of the world leaders in supplying yeast and bacteria to
various industries, among which animal and human nutrition. Founded in the 1930's, Institut Rosell was originally devoted to dairy
bacteriology - it was the first
to introduce yogurt to North America... In the 1940's, a drying process for
lactic ferments for medical uses was developed.
The work in fine-tuning a
vacuum-drying process for frozen cultures led to the development of
a revolutionary new technology - freeze drying - which marked the
end of liquid cultures and the dawn of the modern probiotic era. With time,
Institut Rosell's areas of interest multiplied and broadened
towards developing cultures to meet demands in
fields as diverse as the agro-food industry and pharmaceuticals, in
addition to rapidly growing world of human and animal
probiotics.
Today, Institut Rosell manages the Human Nutrition and
Health activities of Lallemand, specializing in the selection,
development, production and marketing of probiotic formulations for
human nutrition and health. Its main offices and research laboratories

Lal'Food
and Lallemand / American Yeast Nutritional Food Ingredients are the new
functional food business units of Lallemand, resp. for Europe and the Americas. Working in close
partnership with Institut Rosell, they focuse on integrating its
clinically and scientifically documented probiotic strains and other health
ingredients (highly bioavailable mineral yeast, yeast beta glucan,
plant extracts, etc.) into various food
applications - chocolate, fruit juice, cereals, etc. They have been,
and still are, carrying out trials in order to promote this
innovative path for the health industry.

Lallemand Pharma International AG (LPI - Switzerland), a new
affiliate of Lallemand dedicated exclusively to the clinical studies,
registrations, marketing and sales of pharmaceutical products, was
created in early 2008. It acquired the
business and intellectual property rights of the drug sold under the
brands Ismigen and Immubron in various countries around the world.
The primary objective of LPI is to develop
and sell a range of bacterial lysates (Ismigen, Immubron, Bromunyl) that
Lallemand has been producing at its St Simon facility for the last 15
years. The specificity of Lallemand's lysates is that they are produced
from a complete range of inactivated pathogenic bacteria that undergo a
mechanical lysis. This original and unique process gives the drug a far
stronger immunogenic power than other lysates presently on the market.
They target respiratory infections, which are currently developing and
believed to become a major cause of disease by 2020.
For now Ismigen is sold in Italy,
Portugal, Mexico, Uruguay and Chile, and is under registration in a few
other counties. As far as 2008 is concerned, the priority countries to
develop will be Ukraine and CIS countries, South America, Turkey and
India.
