The Siebel Institute of Technology

In early 2000, Lallemand purchased a majority share in the Siebel Institute of Technology, the oldest brewing school in North America. Established in 1872, the Siebel Institute has a long history in brewing education and research, making it one of the world’s most respected brewing schools and analytical laboratories. Siebel Institute manufactures laboratory media and offers services such as yeast culture maintenance, DNA fingerprinting, beer evaluation & analysis, recipe formulation, consulting and contract research. With industry-leading laboratory and research facilities staffed by highly qualified personnel, Siebel Institute works to continually add new services that meet the needs of brewers of every size.

 In education, Siebel Institute continues its role as a world leader in professional training services for the brewing industry. With campuses in Chicago & Montreal, Siebel Institute offers courses that cover topics ranging from homebrewing to the industry’s most advanced brewing microbiology program. The Siebel Institute also partners with Doemens Academy of Germany to offer courses under the World Brewing Academy (WBA) name, offering campus-based courses in both Munich and Chicago as well as the most advanced web-based training program in brewing.  The flagship course, the 12-week WBA International Diploma in Brewing Technology program, takes dozens of students each year on an intense international training program in the U.S. and Central Europe, providing the most unique course experience offered anywhere in the world.

AB Vickers

In early 2001 Lallemand acquired AB Vickers, one the world's leading organisations in the production and marketing of isinglass finings. Isinglass finings, fish derived collagen, are extremely effective in clarifying beer after fermentation. Many leading brewing companies use isinglass extensively throughout the world. Copper finings, another of Vickers specialities, are alginate derived and are used to aid hot and cold break in the copper or kettle. Vickers has an unrivalled experience and reputation in the visual stabilisation of beer.
