between certain useful bacteria and yeasts to provide authentic,
consistent sourdough products.
The product
line continues to evolve and provide the baker with a range of
possibilities from a very subtle, sophisticated flavor profile to a
robust unmistakable sour. The du Jour line allows the baker to produce products
without worry of maintaining a local, homegrown starter. Lalvain du
Jour(r) products also give the baker the ability to produce multiple
starters in the same bakery without the danger of
cross-contamination.
