Lallemand Lalvain du Jour® products are the result of extensive research into the interactions between certain useful bacteria and yeasts to provide authentic, consistent sourdough products.
The product line continues to evolve and provide the baker with a range of possibilities from a very subtle, sophisticated flavor profile to a robust unmistakable sour. The du Jour  line allows the baker to produce products without worry of maintaining a local, homegrown starter. Lalvain du Jour(r) products also give the baker the ability to produce multiple starters in the same bakery without the danger of cross-contamination.
