Leaveners & Baking Powder

Lallemand's Eagle®  chemical leaveners are used to give cookies, cakes and other baked goods their characteristic volume and texture through controlled leavening action.

Products:

  • Eagle Double Acting Baking Powder
    Specially formulated to provide maximum bench tolerance and controlled leavening action. It provides leavening in the batter during mixing and continues to provide gas during baking to produce optimum quality for chemically leavened bakery products.
    It can be used in all types of chemically leavened bakery products : cakes, cookies, pizzas, tortillas, flat bread
  • Eagle Single Acting Baking Powder
    Specially formulated single acting chemical leavener designed for applications requiring slower gas release prior to actual baking. It provides more tolerance during periods of extended floor time.
    It can be used in cakes, cookies, biscuits, crackers and other chemically leavened bakery products.
