Dry Yeast
Many bakers prefer dry yeast because of its
stability, consistency and convenience. Lallemand offers a range of
dried yeasts produced from specific strains tolerant of the drying
process yet highly effective in baking systems.
Instaferm® and
Fermipan® instant yeasts are intended to be
used in a direct addition to the dough. Eagle® PADY (protected active dried yeast)
is intended to be used in mixes when the yeast will come into
contact with flour or other ingredients with moisture contents
greater than 5%.
Instaferm and Fermipan
are available in Red (suitable for most applications) or
Eagle Gold (developed for high sugar doughs).
